It’s time to make your breakfast favorite healthier

Looking for a way to get some more protein in?  These gluten free pancakes are just about the easiest pancakes to make.  All you need is a pan, a blender, and 4 ingredients.  My kind of recipe.

A client turned me on to this recipe and I made a couple tweaks to come up with what I think is a pretty good, protein packed pancake.  With 42 grams in one batch, I can serve up some protein to my 1 1/2 year old son who doesn’t like animal protein in a pancake disguise!  Give it a try.

4 eggs

1/2 cup cottage cheese

1/2 cup old fashioned oats

1 TSP Baking powder

Add all ingredients into blender and blend until completely mixed 1-2 min.  Cook exactly as you normally would a regular pancake.  Serve and enjoy!
